Soup Week Day 5: Sancoche, the Heavyweight
Soup Week, day 5. Every soup this week starts with fresh Trinidad pimento in the base. (Here's why.)
The heavyweight. Split peas, dasheen, yam, sweet potato, cassava, green fig, dumplings, coconut milk, and salted meat, all in one pot. It's a full meal. Nobody leaves hungry.
The pimento moment: all through the base, and again in the green seasoning that goes in with the peas. Sancoche is the soup where you taste the seasoning most.
Quick method: Cook the split peas with the salted meat, onion, garlic, and pimento until the peas break down. Add all the provisions and coconut milk. Add the dumplings near the end. Simmer until everything is soft and the pot is thick.
No green seasoning in the fridge? It takes ten minutes.
Missed a day? Catch up on corn soup, callaloo, fish broth, and red bean soup.
