Soup Week Day 3: Fish Broth, the Cure for Everything
Soup Week, day 3. Every soup this week starts with fresh Trinidad pimento in the base. (Here's why.)
The cure for everything. Light, clear, and full of flavor. Fresh fish (kingfish, carite, or red snapper), green fig, potato, carrot, onion, and plenty chadon beni, finished with lime.
The pimento moment: fish broth without pimento isn't fish broth. It goes in the water with the onion and garlic before the fish, so the broth is seasoned before anything else touches it.
Quick method: Season the fish with green seasoning and lime. Boil the provisions in water with onion, garlic, pimento, and thyme until nearly tender. Add the fish and cook gently just until it's done. Finish with lime and lots of chadon beni. Don't overcook the fish.
No green seasoning in the fridge? It takes ten minutes.
Tomorrow: red bean soup.
