Soup Week Day 4: Red Bean Soup That Holds a Spoon Up

Soup Week Day 4: Red Bean Soup That Holds a Spoon Up

Soup Week, day 4. Every soup this week starts with fresh Trinidad pimento in the base. (Here's why.)

Thick, hearty, the kind that holds a spoon up. Red beans, provisions (sweet potato, yam, dasheen), carrot, pumpkin, dumplings, a little coconut milk. Pig tail or salted beef if that's your house.

The pimento moment: green seasoning, heavy on the pimento, stirred through the beans as they cook, plus a few chopped fresh into the base.

Quick method: Cook the beans (with the salted meat, if using) until tender. Add green seasoning, provisions, carrot, pumpkin, and coconut milk. Drop the dumplings. Simmer until thick and the provisions are soft.

No green seasoning in the fridge? It takes ten minutes.

Tomorrow: sancoche.

Running low on pimento? Order here.
