Why fresh beats jarred

Fresh Pimento Peppers Are a Different Ingredient Entirely

Walk into most grocery stores in the Southeast and ask for pimentos, and you'll be handed a little jar of soft, sweet red pepper strips packed in brine — fine for pimento cheese, useless for a Trini pot. Fresh pimento peppers are the opposite in every way: firm and glossy, perfumed like a Scotch Bonnet, and built to be blended into green seasoning, tucked into stew chicken, or sliced raw over fish before it hits the oven.

Heat, canning, and months on a shelf strip out the very thing that makes this pepper legendary — its aroma. Our peppers never see a jar. We hand-pick each order the same week it ships, pack it fresh, and send it with expedited shipping, so what lands on your cutting board smells the way the market in Trinidad smells. If you've only ever cooked with the jarred version, your first fresh batch will be a revelation.

Fresh vs. jarred, at a glance:

  • Aroma: fresh pimentos perfume the whole kitchen; jarred pimientos smell of brine.
  • Texture: crisp and blendable for green seasoning vs. soft strips that dissolve.
  • Variety: ours is the true Trinidad seasoning pepper — not the Spanish sweet pepper grocery jars are made from.

Lauderhill

The heart of Broward's Caribbean community. Your peppers arrive fresher than the ones flown into the shops.

Orlando

Central Florida families get harvest-week pimentos for the Sunday pot, delivered to the door.

Tampa

Gulf-coast kitchens don't have to settle for jarred pimientos or bell-pepper substitutes.

Metro Atlanta

Stone Mountain, Decatur, Marietta and beyond — Georgia is one of our busiest routes for a reason.

Questions

Pimento Questions, Answered

Is a pimento a pepper?

Yes — but in the Caribbean, "pimento" means something different than it does in an American grocery store. The Trinidad pimento is a seasoning pepper (Capsicum chinense), a cousin of the Scotch Bonnet with all of its fruity, floral aroma and virtually none of its heat. It is the backbone of Trinidadian green seasoning, not the small sweet pepper stuffed into olives.

Are pimentos the same as red peppers?

No. A red bell pepper is mild but flat in flavor; the jarred "pimiento" is a sweet Spanish pepper, usually canned. Trinidad pimentos are aromatic seasoning peppers — they smell like a Scotch Bonnet, perfume a whole pot, and come in green, orange, and red depending on ripeness. The color is just the stage of ripeness; the flavor is the same.
