Trinidad Chicken Pelau

🌶️ Uses 4 Pimento Peppers (finely chopped)

Ingredients

3 lbs chicken pieces (marinated in Green Seasoning)
2 cups parboiled rice
1 can pigeon peas
2 tbsp brown sugar (for browning)
1 can coconut milk
1 whole Scotch bonnet (left whole!)

Fresh pimentos for this recipe come in every farm box.

Method

Burn the brown sugar in a heavy pot until dark amber.

Add marinated chicken to coat.

Stir in pigeon peas, chopped pimentos, and rice.

Pour in coconut milk and water, top with the whole Scotch bonnet, cover, and simmer until liquid is absorbed.

This recipe needs 4 Pimento Peppers (finely chopped) — get them fresh from the farm.
